Easy to Make Coconut Macaroons

This recipe has been published in several places, including on the package of one brand of coconut flakes. Karen is the one who wrote it down for me, so I give her credit.

1 1/3 c. coconut
1/3 c. sugar
1/4 c. chopped almonds (optional)
2 Tbsp. flour
1/8 tsp. salt

2 egg whites
1/2 tsp. almond extract.

Preheat oven to 325F.

Combine dry ingredients in a mixing bowl.

Blend in wet ingredients.

Drop by teaspoonfuls on greased cookie sheets.

Bake at 325 degress for 20 minutes or until edges are golden brown.

Remove cookies from baking sheets immediately after baking.
